A new generation of Savennières.

Domaine Loïc Mahé is the expression of a vigneron deeply committed to the relationship between soil, vine, and wine. Working primarily with Chenin Blanc in Savennières, Loïc farms organically and biodynamically, treating the vineyard as a living ecosystem rather than simply a source of fruit. His approach emphasizes healthy soils, biodiversity, low yields, and careful observation of each parcel, allowing the character of Savennières' ancient schist soils to emerge with remarkable clarity.

Savennières is one of the Loire's great white wine terroirs, producing Chenin capable of extraordinary concentration and longevity. Loïc's wines capture that inherent power without sacrificing energy or finesse. The combination of schist, exposure, and the moderating influence of the Loire creates wines with a distinctive interplay of ripe orchard fruit, citrus, floral notes, salinity, and tightly wound acidity.

In the cellar, Loïc works with a similarly light touch. Fermentation is driven by native yeasts, with élevage designed to build texture and complexity rather than impose a winemaking signature. Larger-format and neutral vessels allow the wines to develop gradually while preserving the freshness and mineral character of the fruit. The result is Savennières that feels simultaneously traditional and contemporary: deep, dry, energetic, and remarkably expressive of place.

Alongside his appellation wines, Loïc also produces Xouton Noir, a small-production series that gives him greater freedom to experiment outside the boundaries of AOC regulation. These wines reveal another side of his personality as a vigneron—curious, instinctive, and willing to challenge convention—while maintaining the same commitment to organic farming and minimal intervention.
